  • 2 cups mashed potatoes (leftover or freshly made)
  • 1 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 2 green onions, finely chopped
  • 1 egg, lightly beaten
  • 1/2 cup all-purpose flour
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • Vegetable oil for frying

Feel free to substitute the cheddar with mozzarella for a different cheesy flavor, or add a touch of smoked paprika for a hint of smokiness. In our family, improvisation has always been a culinary strength, thanks to my mother’s flair for creating something delicious from whatever was on hand.

Instructions

  1. In a large bowl, combine the mashed potatoes, cheddar cheese, Parmesan cheese, green onions, and garlic powder. Mix until well combined.
  2. Add the beaten egg and flour to the mixture, stirring until you have a dough-like consistency. Season with salt and pepper to taste.
  3. Shape the mixture into small balls, about the size of a golf ball. If the mixture is too sticky, add a bit more flour.
  4. Heat vegetable oil in a deep pan over medium heat. You’ll want enough oil to submerge the bites halfway.
  5. Once the oil is hot, carefully place a few of the potato balls into the pan, making sure not to overcrowd it. Fry until golden brown, about 3-4 minutes per side.
  6. Remove the bites with a slotted spoon and drain on paper towels to remove excess oil. Repeat with the remaining potato balls.
  7. Serve warm and enjoy the crispy, cheesy goodness!

A tip from my own kitchen: when frying, ensure the oil is hot enough by dropping a small piece of bread into it—if it sizzles immediately, you’re good to go. This trick, taught by Nonna Rosa, has saved many a dish from being undercooked.
