Ingredients
- 2 cups mashed potatoes (leftover or freshly made)
- 1 cup shredded cheddar cheese
- 1/4 cup grated Parmesan cheese
- 2 green onions, finely chopped
- 1 egg, lightly beaten
- 1/2 cup all-purpose flour
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
- Vegetable oil for frying
Feel free to substitute the cheddar with mozzarella for a different cheesy flavor, or add a touch of smoked paprika for a hint of smokiness. In our family, improvisation has always been a culinary strength, thanks to my mother’s flair for creating something delicious from whatever was on hand.
Instructions
- In a large bowl, combine the mashed potatoes, cheddar cheese, Parmesan cheese, green onions, and garlic powder. Mix until well combined.
- Add the beaten egg and flour to the mixture, stirring until you have a dough-like consistency. Season with salt and pepper to taste.
- Shape the mixture into small balls, about the size of a golf ball. If the mixture is too sticky, add a bit more flour.
- Heat vegetable oil in a deep pan over medium heat. You’ll want enough oil to submerge the bites halfway.
- Once the oil is hot, carefully place a few of the potato balls into the pan, making sure not to overcrowd it. Fry until golden brown, about 3-4 minutes per side.
- Remove the bites with a slotted spoon and drain on paper towels to remove excess oil. Repeat with the remaining potato balls.
- Serve warm and enjoy the crispy, cheesy goodness!
A tip from my own kitchen: when frying, ensure the oil is hot enough by dropping a small piece of bread into it—if it sizzles immediately, you’re good to go. This trick, taught by Nonna Rosa, has saved many a dish from being undercooked.
