- 1 pound boneless, skinless chicken breasts, sliced into thin strips
- 2 tablespoons olive oil
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 medium onion, sliced
- 3 cloves garlic, minced
- 2 teaspoons chili powder
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 8 ounces penne pasta
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1 cup shredded cheddar cheese
- 1/4 cup chopped fresh cilantro
- Lime wedges for serving
Feel free to substitute the chicken with shrimp or even tofu for a vegetarian twist. You can also use any type of pasta you have on hand—fusilli or rigatoni work beautifully in this dish.
Instructions
- Start by bringing a large pot of salted water to a boil. Add the penne pasta and cook according to the package instructions until al dente. Drain and set aside.
- In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the chicken strips and cook until golden brown and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
- In the same skillet, add the remaining tablespoon of olive oil. Add the sliced bell peppers, onion, and garlic. Sauté for about 5 minutes, or until the vegetables are tender and slightly charred.
- Sprinkle the chili powder, cumin, paprika, salt, and black pepper over the vegetables. Stir to coat evenly.
- Return the chicken to the skillet, along with the cooked pasta. Pour in the heavy cream and chicken broth, stirring to combine all the ingredients.
- Reduce the heat to low and let the mixture simmer for about 3-4 minutes, allowing the sauce to thicken slightly.
- Stir in the shredded cheddar cheese until melted and creamy. Remove from heat and sprinkle with fresh cilantro.
- Serve the pasta hot, garnished with lime wedges for a zesty finish. Enjoy!
