Ingredients
Scale
- 4 boneless, skinless chicken breasts (about 6 ounces each)
- Salt and freshly ground black pepper, to taste
- 2 tablespoons olive oil (or use avocado oil for a mild flavor)
- 4 cloves garlic, minced (Nonna always said, “More garlic, more love!”)
- 1 cup heavy cream (substitute with half-and-half for a lighter option)
- 1/2 cup freshly grated Parmesan cheese (avoid pre-grated for best melt and flavor)
- 1 teaspoon Italian seasoning (or a blend of dried basil, oregano, and thyme)
- 1/2 cup chicken broth (homemade or low-sodium store-bought works beautifully)
- 2 tablespoons unsalted butter
- Fresh parsley, chopped, for garnish
Instructions
- Start by seasoning both sides of the chicken breasts generously with salt and freshly ground black pepper. I always think of this as the first act of love when preparing the meat.
- Heat the olive oil in a large skillet over medium-high heat until shimmering. Place the chicken breasts in the pan and cook for about 5-6 minutes per side, or until golden brown and cooked through (internal temperature should reach 165°F). Once done, transfer the chicken to a plate and tent loosely with foil to keep warm.
- Reduce the heat to medium and add the butter to the same skillet. Once melted, toss in the minced garlic and sauté for about 1 minute, or until fragrant but not browned. This step always reminds me of standing on a stool beside my grandmother, watching her coax flavor out of simple ingredients.
- Pour in the chicken broth and scrape up any browned bits from the bottom of the pan—those little morsels carry so much flavor. Let the broth simmer and reduce slightly for about 2-3 minutes.
- Stir in the heavy cream, Parmesan cheese, and Italian seasoning. Allow the sauce to simmer gently for 3-4 minutes, stirring frequently until it thickens and becomes silky. If the sauce feels too thick, add a splash more broth or cream to loosen it.
- Return the chicken breasts to the skillet, spooning the sauce generously over them. Let everything cook together for another 2 minutes so the chicken soaks in the creamy goodness.
- Before serving, sprinkle with fresh parsley for a pop of color and a hint of freshness. This little touch always makes the dish feel complete and festive, perfect for any table.
