Substitution Tips: If you prefer a milder sauerkraut, try using pickled red cabbage or even kimchi for a spicy twist. For the dressing, Thousand Island works perfectly if you don’t have Russian dressing on hand. Turkey bacon can be used for a leaner option, though the smoky richness of traditional bacon is hard to beat.

- Preheat your oven to 425°F (220°C). Spread the frozen tater tots evenly on a large baking sheet lined with parchment paper or a silicone mat for easy cleanup. Drizzle with olive oil and toss gently to coat for extra crispness.
- Bake the tater tots for 25-30 minutes, flipping halfway through, until they are golden and crispy on all sides. This step is crucial—crispy tots are the heart of the dish!
- While the tots are baking, cook the bacon in a skillet over medium heat until crispy, about 6-8 minutes. Transfer to a paper towel-lined plate to drain excess fat, then chop into bite-sized pieces.
- In the same skillet, melt the butter and briefly sauté the sauerkraut for 2-3 minutes. This warms it up and mellows the acidity without losing its signature tang.
- Once the tots are out of the oven, reduce the oven temperature to 375°F (190°C). Layer the tots with the sautéed sauerkraut, chopped bacon, and shredded Swiss cheese.
- Return the baking sheet to the oven and bake for another 5-7 minutes, or until the cheese is melted and bubbling.
- Remove from oven and drizzle with Russian dressing. A few cracks of fresh black pepper add a nice finishing touch.
