- 8 slices of brioche bread
- 1 cup fresh strawberries, hulled and sliced
- 8 ounces cream cheese, softened
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 teaspoon lemon zest (optional, but adds a lovely brightness)
- 2 large eggs
- 1/2 cup milk
- 1/2 cup all-purpose flour
- A pinch of salt
- Vegetable oil, for frying
- Powdered sugar, for dusting
Instructions
- Begin by preparing the filling. In a medium bowl, mix the softened cream cheese, granulated sugar, vanilla extract, and lemon zest until smooth and creamy.
- Lay out the brioche slices and spread a generous amount of the cream cheese mixture on half of them. Top with sliced strawberries, pressing them gently into the cheese.
- Cover with the remaining slices of brioche to form sandwiches, pressing the edges together lightly to seal.
- In a shallow bowl, whisk together the eggs, milk, flour, and a pinch of salt to create a smooth batter.
- Heat about 1 inch of vegetable oil in a large skillet over medium heat. The oil is ready when a drop of batter sizzles upon contact.
- Dip each sandwich into the batter, ensuring all sides are coated, then carefully place it into the hot oil.

- Remove the sandwiches from the oil and drain on a paper towel-lined plate. Dust with powdered sugar before serving.
