- 1.5 pounds boneless, skinless chicken breasts, cut into 1-inch cubes
- 1 cup ranch dressing
- 1/2 cup grated parmesan cheese
- 4 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon dried Italian herbs
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Wooden skewers, soaked in water for 30 minutes
Instructions
- In a large bowl, combine the ranch dressing, parmesan cheese, minced garlic, olive oil, Italian herbs, salt, and pepper. Stir until well mixed.
- Add the chicken cubes to the marinade, ensuring each piece is thoroughly coated. Cover and refrigerate for at least 1 hour, allowing the flavors to meld.
- Preheat your grill to medium-high heat. While waiting, thread the marinated chicken pieces onto the soaked wooden skewers, about 4-5 pieces per skewer.
- Place the skewers on the preheated grill. Cook for 10-12 minutes, turning occasionally, until the chicken is cooked through and has a nice char.
- Remove the skewers from the grill and let them rest for a few minutes. This is a perfect time to reminisce about those family dinners where my grandmother would insist on waiting just a bit before digging in, allowing the flavors to settle beautifully.
