- 1 ½ pounds of fresh carrots, peeled and cut into 2-inch sticks (you can use rainbow carrots for a colorful twist)
- 2 tablespoons olive oil (extra virgin is best for depth of flavor)
- 2 tablespoons pure honey (local honey adds a lovely floral note)
- 1 teaspoon sea salt (adjust to taste)
- ½ teaspoon freshly ground black pepper
- 1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)
- 1 tablespoon fresh lemon juice (optional, for brightness)
- 2 cloves garlic, thinly sliced (optional, for a subtle savory undertone)
If you don’t have thyme on hand, rosemary or sage work beautifully, too. And for a vegan twist, swap honey for maple syrup—though I do find honey’s flavor a bit richer and more nuanced.
Instructions
- Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper to prevent sticking and for easy cleanup.
- In a large mixing bowl, combine the olive oil, honey, sea salt, black pepper, and fresh thyme leaves. Stir well to create a fragrant glaze.
- Add the peeled and cut carrots to the bowl. If using, toss in the sliced garlic cloves. Use your hands or a spoon to gently coat every piece of carrot with the honey mixture.
- Spread the carrots out evenly on the prepared baking sheet in a single layer. Crowding the pan will steam the carrots rather than roast them, so give them some breathing room.
- Place the baking sheet in the preheated oven and roast for 25 to 30 minutes. About halfway through, use a spatula to flip the carrots to ensure even caramelization.
- Check for doneness by piercing a carrot with a fork—it should be tender but still have a slight bite.
- Once roasted, remove the carrots from the oven and immediately drizzle with fresh lemon juice for a bright finish. Toss lightly to combine.
- Transfer to a serving dish and enjoy warm, or at room temperature.
