- 12 ounces of spaghetti
- 1/2 cup extra virgin olive oil
- 4 cloves garlic, thinly sliced
- 1 teaspoon red pepper flakes
- 1/2 teaspoon sea salt
- 1/4 teaspoon black pepper
- 1/2 cup freshly grated Parmesan cheese
- 1/4 cup fresh basil leaves, torn
- Zest of 1 lemon
- Juice of 1/2 lemon
Instructions
- Bring a large pot of salted water to a boil. Add the spaghetti and cook until al dente, about 8-10 minutes. Reserve 1 cup of pasta water and drain the rest.
- In a large skillet over medium heat, warm the olive oil. Add the garlic slices and sauté until fragrant and golden, about 2 minutes. Be careful not to let them burn, as this can add a bitter taste.
- Stir in the red pepper flakes, sea salt, and black pepper, allowing the spices to infuse into the oil for another minute.
- Add the cooked spaghetti to the skillet, tossing to coat the pasta evenly with the oil and garlic mixture. If needed, gradually add the reserved pasta water to create a silky sauce that clings to the noodles.
- Remove from heat and stir in the Parmesan cheese, ensuring it’s evenly distributed and melts into the pasta.
- Finish with fresh basil, lemon zest, and a squeeze of lemon juice for a vibrant, refreshing finish.
