- 12 ounces of your favorite pasta (spaghetti or fettuccine work well)
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- Zest of 2 large oranges
- Juice of 1 large orange
- 1/4 cup fresh parsley, chopped
- Salt and pepper to taste
- 1/4 cup grated Parmesan cheese (optional)
Instructions
- Begin by cooking the pasta in a large pot of salted boiling water until al dente, according to package instructions. Reserve 1/2 cup of the pasta water before draining.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1-2 minutes.
- Stir in the dried oregano and orange zest, allowing the flavors to meld for another minute.
- Add the freshly squeezed orange juice to the skillet, stirring to combine. Let it simmer for 2-3 minutes.
- Toss the cooked pasta into the skillet, gently mixing to coat the pasta with the sauce. If the sauce is too thick, add the reserved pasta water a little at a time until you reach the desired consistency.
- Season with salt and pepper to taste, then stir in the chopped parsley for a burst of freshness.
- Serve immediately, topping with grated Parmesan cheese if desired.
