For a twist reminiscent of my time in Spain, try adding a pinch of smoked paprika. If you prefer a meatier sauce, a few crumbles of Italian sausage can add depth and texture.
Instructions
- Heat the olive oil in a large skillet over medium heat. Add the minced garlic and chopped onion, sautéing until the onion becomes translucent, about 5 minutes. This step takes me back to the early mornings with Nonna Rosa, where the sizzle of garlic was the kitchen’s wake-up call.
- Stir in the tomato paste, allowing it to fry slightly for a minute to deepen its flavor. Add the crushed tomatoes, sugar, oregano, red pepper flakes, and season with salt and pepper.
- Reduce the heat to a simmer, letting the sauce cook for 20 minutes. Stir occasionally, tasting and adjusting seasoning as needed. The aroma will transport you to an Italian marketplace, much like the ones I explored in my twenties.
- Just before serving, stir in the fresh basil leaves. This vibrant addition recalls the fresh herbs my grandmother would pluck from her garden, adding that quintessential touch of love.
- Serve over your favorite pasta, topped with grated Parmesan cheese. Savor the moment, knowing you’ve created something beautiful and delicious.
