Ingredients
Scale
- 2 cups fresh strawberries, hulled and sliced
- 2 tablespoons granulated sugar
- 1 tablespoon fresh lemon juice
- 8 ounces cream cheese, softened
- 1 cup heavy cream
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup graham cracker crumbs
- 2 tablespoons melted butter
Substitutions can be easily managed here; if strawberries are out of season, raspberries or blueberries work beautifully as well. You can also swap the graham crackers for digestive biscuits for a slightly different flavor profile.
Instructions
- Combine the sliced strawberries, granulated sugar, and lemon juice in a bowl. Stir gently and set aside to macerate for about 15 minutes, allowing the strawberries to release their juices.
- In a separate bowl, beat the cream cheese until smooth. Gradually add the powdered sugar and vanilla extract, continuing to beat until well combined and creamy.
- In another bowl, whip the heavy cream until soft peaks form. Gently fold the whipped cream into the cream cheese mixture, creating a light and airy texture.
- Mix the graham cracker crumbs with the melted butter until the crumbs are evenly coated.
- To assemble, start by layering the graham cracker mixture at the bottom of your serving glasses or trifle dish. Add a layer of the cream cheese mixture, followed by a layer of strawberries. Repeat the layers until the glasses are filled, ending with a layer of strawberries.
- Chill the trifles in the refrigerator for at least an hour before serving, allowing the flavors to meld together beautifully.
As I put together these layers, I often think of the layered landscapes of the European countryside, each layer bringing its own unique charm to the whole picture.
