  • 1 cup of fresh strawberries, hulled and diced
  • 1 tablespoon of granulated sugar
  • 1 cup of heavy whipping cream
  • 8 oz of cream cheese, softened
  • 1/2 cup of powdered sugar
  • 1 teaspoon of vanilla extract
  • 6 waffle cones
  • 1 cup of crushed strawberry-flavored cereal (such as Cap’n Crunch’s Crunch Berries)
  • 1/4 cup of melted white chocolate chips

If you can’t find strawberry-flavored cereal, feel free to substitute it with crushed graham crackers mixed with freeze-dried strawberries.

Instructions

  1. In a small bowl, combine the diced strawberries and granulated sugar. Let them sit for about 10 minutes to release their juices.
  2. In a large mixing bowl, whip the heavy cream until stiff peaks form. Set aside.
  3. In another bowl, beat the cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
  4. Gently fold the whipped cream into the cream cheese mixture, followed by the macerated strawberries. Mix until just combined.
  5. Carefully melt the white chocolate chips in a microwave or double boiler. Dip the rims of the waffle cones into the melted chocolate, then immediately coat them with crushed strawberry-flavored cereal. Let them set for a few minutes.
  6. Spoon the cheesecake mixture into a piping bag or a resealable plastic bag with a corner snipped off. Pipe the filling into each cone until full.
  7. Optionally, drizzle additional melted white chocolate over the top of the filled cones and sprinkle more crushed cereal for extra crunch.
