  • 12 large pasta shells
  • 1 pound ground beef (or turkey for a lighter option)
  • 1 packet taco seasoning
  • 1 cup salsa (homemade or store-bought)
  • 1 cup ricotta cheese
  • 1 cup shredded cheddar cheese
  • 1/2 cup chopped fresh cilantro
  • 1/4 cup chopped green onions
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Jalapeños for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Cook the pasta shells according to the package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add ground beef and cook until browned, about 5-7 minutes. Drain excess fat.
  3. Stir in taco seasoning and half of the salsa, mixing well. Allow the mixture to simmer for about 2 minutes, letting the flavors meld together.
  4. In a medium bowl, combine ricotta cheese, half of the cheddar cheese, and chopped cilantro. Season with salt and pepper to taste.
  5. Fill each pasta shell with a spoonful of the ricotta mixture, followed by a spoonful of the beef mixture. Arrange filled shells in a baking dish.
  6. Top the shells with remaining salsa and sprinkle with black beans and the rest of the cheddar cheese.
  7. Cover the baking dish with foil and bake for 20 minutes. Remove foil and bake for an additional 10 minutes, or until cheese is bubbly and golden.
  8. Garnish with green onions and jalapeños if desired. Serve hot and enjoy!
