- 12 large pasta shells
- 1 pound ground beef (or turkey for a lighter option)
- 1 packet taco seasoning
- 1 cup salsa (homemade or store-bought)
- 1 cup ricotta cheese
- 1 cup shredded cheddar cheese
- 1/2 cup chopped fresh cilantro
- 1/4 cup chopped green onions
- 1 can (15 oz) black beans, drained and rinsed
- 1 tablespoon olive oil
- Salt and pepper to taste
- Jalapeños for garnish (optional)
Instructions
- Preheat your oven to 375°F (190°C). Cook the pasta shells according to the package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add ground beef and cook until browned, about 5-7 minutes. Drain excess fat.
- Stir in taco seasoning and half of the salsa, mixing well. Allow the mixture to simmer for about 2 minutes, letting the flavors meld together.
- In a medium bowl, combine ricotta cheese, half of the cheddar cheese, and chopped cilantro. Season with salt and pepper to taste.
- Fill each pasta shell with a spoonful of the ricotta mixture, followed by a spoonful of the beef mixture. Arrange filled shells in a baking dish.
- Top the shells with remaining salsa and sprinkle with black beans and the rest of the cheddar cheese.
- Cover the baking dish with foil and bake for 20 minutes. Remove foil and bake for an additional 10 minutes, or until cheese is bubbly and golden.
- Garnish with green onions and jalapeños if desired. Serve hot and enjoy!
