Ingredients
- 4 large flour tortillas (10-inch diameter works best)
- 1 cup marinara sauce (homemade or store-bought; Nonna Rosa’s marinara recipe is a treasure!)
- 1 ½ cups shredded mozzarella cheese
- ½ cup sliced pepperoni or your favorite pizza toppings (mushrooms, bell peppers, olives)
- 2 tablespoons grated Parmesan cheese
- 1 teaspoon dried Italian seasoning
- 1 tablespoon olive oil (for brushing)
- Optional: fresh basil leaves for garnish
Substitution tips: Feel free to swap flour tortillas for whole wheat or gluten-free varieties. For a vegetarian twist, replace pepperoni with sautéed mushrooms or spinach. Vegan cheese works beautifully too—my daughters love when I sneak in a dairy-free version!
Instructions
- Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper for easy cleanup.
- Lay out one tortilla on a flat surface. Spread about ¼ cup of marinara sauce evenly over the tortilla, leaving a small border around the edges to prevent spilling.
- Sprinkle ⅓ cup of shredded mozzarella cheese over the sauce. Add your chosen toppings evenly—pepperoni slices, mushrooms, or whatever you enjoy most.
- Sprinkle a pinch of dried Italian seasoning and a teaspoon of grated Parmesan over the toppings for that extra burst of flavor.
- Carefully roll the tortilla tightly from one edge to the other, keeping the filling inside. Place the roll seam side down on the prepared baking sheet.
- Repeat the process with the remaining tortillas and fillings.
- Brush the tops of the rolls lightly with olive oil. This helps achieve a beautiful golden crust.
- Bake in the preheated oven for 15-18 minutes, or until the tortillas are crisp and the cheese inside is bubbly and melted.
- Remove from the oven and let the rolls cool for about 5 minutes before slicing them into 1-inch pieces—perfect bite-sized snacks!
- Garnish with fresh basil leaves if desired, and serve warm.
When I first made these with Olivia and Isabella, I was amazed at how eager they were to help with each step, especially rolling the tortillas. It’s one of those recipes that invites family involvement, making cooking a joyful, shared experience.
