Ingredients
Creating this dish is as simple as gathering a few pantry staples and fresh ingredients. Here’s what you’ll need:
- 1 pound ground beef
- 1 packet taco seasoning
- 1 can (15 ounces) black beans, drained and rinsed
- 1 can (15 ounces) corn, drained
- 1 can (10 ounces) diced tomatoes with green chilies
- 2 cups shredded cheddar cheese
- 3 cups corn chips
- 1/2 cup sour cream
- 1/4 cup chopped cilantro
- 1 small red onion, diced
- 1 avocado, diced
- Salt and pepper to taste
Feel free to make this dish your own. Substitute ground turkey for beef or add some heat with jalapeños if you fancy a spicier kick, much like my mother Elena would do in her spur-of-the-moment culinary experiments.
Instructions
- Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish.
- In a large skillet over medium heat, brown the ground beef until fully cooked, about 7-8 minutes. Drain any excess fat.
- Add the taco seasoning to the beef, along with 1/4 cup of water, stirring until well combined.
- Stir in the black beans, corn, and diced tomatoes with green chilies. Simmer for 5 minutes until heated through.
- Layer half of the corn chips at the bottom of the prepared baking dish. Spread the beef mixture over the chips.
- Top with the shredded cheddar cheese and the remaining corn chips.
- Bake for 20 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and let it cool slightly. Top with sour cream, cilantro, diced red onion, and avocado before serving.
