Creating this dish is as simple as gathering a few pantry staples and fresh ingredients. Here’s what you’ll need:

  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (15 ounces) corn, drained
  • 1 can (10 ounces) diced tomatoes with green chilies
  • 2 cups shredded cheddar cheese
  • 3 cups corn chips
  • 1/2 cup sour cream
  • 1/4 cup chopped cilantro
  • 1 small red onion, diced
  • 1 avocado, diced
  • Salt and pepper to taste

Feel free to make this dish your own. Substitute ground turkey for beef or add some heat with jalapeños if you fancy a spicier kick, much like my mother Elena would do in her spur-of-the-moment culinary experiments.

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. In a large skillet over medium heat, brown the ground beef until fully cooked, about 7-8 minutes. Drain any excess fat.
  3. Add the taco seasoning to the beef, along with 1/4 cup of water, stirring until well combined.
  4. Stir in the black beans, corn, and diced tomatoes with green chilies. Simmer for 5 minutes until heated through.
  5. Layer half of the corn chips at the bottom of the prepared baking dish. Spread the beef mixture over the chips.
  6. Top with the shredded cheddar cheese and the remaining corn chips.
  7. Bake for 20 minutes, or until the cheese is melted and bubbly.
  8. Remove from the oven and let it cool slightly. Top with sour cream, cilantro, diced red onion, and avocado before serving.
