Ingredients
Scale
- 4 salmon fillets (about 6 ounces each)
- 1 tablespoon olive oil
- Salt and freshly ground black pepper, to taste
- Zest of 1 orange
- Juice of 2 oranges (about 1/2 cup)
- 2 tablespoons honey
- 2 teaspoons fresh rosemary, finely chopped
- 1 garlic clove, minced
- 1 teaspoon Dijon mustard
- Optional: 1 teaspoon soy sauce for added depth
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Place the salmon fillets on the prepared baking sheet. Drizzle with olive oil and season with salt and pepper. My grandmother always stressed the importance of seasoning well, a lesson I hold dear.
- In a small saucepan over medium heat, combine the orange zest, orange juice, honey, rosemary, garlic, Dijon mustard, and soy sauce if using. Stir until the mixture begins to simmer and slightly thickens, about 5 minutes. This glaze captures the essence of Mediterranean markets where I spent countless afternoons exploring fresh produce and aromatic herbs.
- Brush the salmon fillets generously with the glaze, reserving some for later.
- Bake the salmon in the preheated oven for 12-15 minutes, or until cooked through and flaky. Midway through baking, brush the salmon with the reserved glaze to enhance the flavor.
- Remove from the oven and let it rest for a few minutes before serving.
