- 2 medium zucchinis, sliced into rounds
- 2 medium summer squashes, sliced into rounds
- 1 pound Italian sausage, casings removed
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 teaspoon dried oregano

- 1 cup marinara sauce (preferably homemade)
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste

If you’re looking to add a twist, you might substitute the Italian sausage with turkey sausage for a lighter option or experiment with different cheeses based on your preference.
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet, heat olive oil over medium heat. Add the diced onion and cook until translucent, about 5 minutes.
- Add the minced garlic, stirring for another minute until fragrant.
- Add the Italian sausage to the skillet, breaking it apart with a wooden spoon. Cook until browned, about 7-10 minutes.
- Stir in the oregano, basil, and marinara sauce. Allow the mixture to simmer for 5 minutes, letting the flavors meld together.
- In a greased casserole dish, layer half of the zucchini and summer squash rounds. Season with a pinch of salt and pepper.
- Spread half of the sausage mixture over the squash layer, then sprinkle with half of the mozzarella cheese.
- Repeat the layers with the remaining zucchini and squash, sausage mixture, and mozzarella cheese.
- Top with grated Parmesan cheese.
- Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden brown.
- Let the casserole cool for a few minutes before serving, allowing the flavors to settle beautifully.
