  • 2 medium summer squashes, sliced into rounds
  • 1 pound Italian sausage, casings removed
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 cup marinara sauce (preferably homemade)
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • 2 tablespoons olive oil

If you’re looking to add a twist, you might substitute the Italian sausage with turkey sausage for a lighter option or experiment with different cheeses based on your preference.

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Add the diced onion and cook until translucent, about 5 minutes.
  3. Add the minced garlic, stirring for another minute until fragrant.
  4. Add the Italian sausage to the skillet, breaking it apart with a wooden spoon. Cook until browned, about 7-10 minutes.
  5. Stir in the oregano, basil, and marinara sauce. Allow the mixture to simmer for 5 minutes, letting the flavors meld together.
  6. In a greased casserole dish, layer half of the zucchini and summer squash rounds. Season with a pinch of salt and pepper.
  7. Spread half of the sausage mixture over the squash layer, then sprinkle with half of the mozzarella cheese.
  8. Repeat the layers with the remaining zucchini and squash, sausage mixture, and mozzarella cheese.
  9. Top with grated Parmesan cheese.
  10. Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden brown.
